Damien Brassel – Corporate Executive Chef

With over nineteen years of cooking, kitchen management and restaurant ownership experience, Damien brings his exciting and diverse experience to his role as Corporate Executive Chef at Rockpool Dining Group and Ananas. He is well known for his unique and modern European style, having combined contemporary and traditional techniques during his previous roles at Michelin-starred establishments including; Ballymaloe House in Ireland; The Fat Duck under Heston Blumenthal, The Marco Pierre White Restaurant and Ferme de Montagne in the French Alps.

Aside from his work in Europe, Damien has also seen an extensive and successful career in the United States. Owning and operating his own restaurant, Knife + Fork in New York, he was awarded Time Out New York’s award for Best New Tasting Menu. He also worked with celebrity chef Bobby Flay, and prior to moving to Australia acted as Corporate Chef for the Steven Starr Restaurant Group in Philadelphia.

Damien oversees a team of talented young chefs at Ananas whom is leading the popular French restaurant into a fresh new era.
